Fried Bananas in Batter with Ground Star Anise and Vanilla

A wonderful treat for anyone who loves tropical fruit! I'm a huge fan of all kinds of exotic fruits, bananas most of all. I've made countless things with them, following recipes or just my own imagination. Recently a friend visited Kerala, in India, and came back with an incredible recipe for battered bananas. Now I treat myself to this little indulgence almost every week. I highly recommend giving it a try.

  • Start with bananas that aren't overripe — peel them and set them aside for now. Next, make the batter. Beat an egg with 2 tablespoons of granulated sugar, then gradually work in the flour. The batter should reach the consistency of sour cream. Then stir in the star anise and vanilla. Back to the bananas: cut them in half lengthwise and then crosswise. Set a skillet over the heat, add coconut oil, and let it warm up. Dip the bananas in the batter and gently lay them in the pan, frying them on both sides. Once all the bananas are golden, arrange them on a platter and serve.
