Fried Mushrooms with Onion in Lard

A fantastic topping for any side dish — packed with flavor and aroma! I came across this recipe in a book. I liked it right away for how good it looked, and something told me it would taste wonderful. And so it did — fried mushrooms with onion now regularly join all sorts of dishes in my rotation, from pasta to buckwheat. I really love fried button mushrooms with onion — a great side!

  • First, clean the mushrooms, then blanch them with boiling water, rinse, and slice. Next, finely chop the onion. Set a skillet over the heat, and once it's hot enough, add the diced lard. Keep it going until the fat renders out. When it does, add the mushrooms and onion, season with salt and pepper, and fry until done. That's it — a very simple recipe, yet the dish comes out wonderfully fragrant and tasty. It's excellent with boiled or mashed potatoes, any grain — really, the choice of side is entirely up to you, and the mushrooms will dress it up beautifully. You can also fry potatoes right in with these same mushrooms — the result is top-notch, and despite how humble it seems, it beats any restaurant dish!
