- This recipe makes a wonderful breakfast, though honestly draniki with cheese are good any time of day — I don't think there's a better breakfast out there. I mix the batter the night before and finish cooking them in the morning; by then there usually isn't much left, but even the leftovers can be turned into something you'll be licking your fingers over. The trick is a little imagination — and fending off the family, who act like they've been cheated if you save any for the next morning. Wash and peel the potatoes and grate them on the very finest side of the grater, the bumpy one that's easy to scrape your knuckles on. Grate the onion on that same side. Carefully spoon off the potato liquid that rises to the top, then stir the rest together with the milk and flour — just a little of each, literally 2 to 3 tablespoons. Season with salt, pepper, and fresh herbs. Heat the vegetable oil until hot and spoon the batter in like pancakes, frying until golden. Grate the cheese — any hard cheese works; you can splurge on parmesan, but there's no shame in using whatever you've got. Finely mince the garlic or press it through a garlic press. Arrange a layer of the pancakes on a baking sheet and top each one with garlic and cheese (you can mix the two together and add a little mayonnaise to bind them). Bake until the cheese melts, and serve with sour cream.
