Homemade Casing-Free Sausage
Juicy, tender, and — best of all — all natural! Making sausage isn't only for specialty factories. This recipe is quite simple, though it does take a little time. You'll also need some aluminum foil.

- Cut the meat and fatback into very small cubes. Beat the eggs, then add the salt, the crushed peppercorns, the crushed garlic, and all your seasonings. Work in the starch a little at a time so it doesn't clump. Combine the meat, fatback, and beaten eggs into a uniform mixture. Take a sheet of foil, spoon the mixture onto it, and shape it into a sausage log; then wrap it up in the foil like a piece of candy, twisting the ends closed tightly. Keep going until you've used up all the mixture. Preheat the oven to 350°F (180°C) and bake the sausages on a baking sheet for about an hour, keeping an eye out so their juices don't leak. Once your casing-free homemade sausage is done, just set it on a plate and serve it with any side dish — or on its own. It's good both hot and cold.
