Bigos with Prunes and Sauerkraut
A traditional dish of Slavic and Baltic cuisine — give it a try! Even though it's considered a classic, I'd never actually tasted it until I stumbled on a few mentions online. I looked up some recipes, was intrigued, and decided to try it, since it sounded like it should be something special. And yes — it's delicious! My family loved it too. It's been a regular at our table ever since. I hope you'll give it a go.

- Cut the ribs into large pieces, then brown them in a deep, heavy-bottomed skillet over medium heat for 10–15 minutes. Don't add any oil or fat, and don't cover the pan. Stir the meat now and then — the ribs should take on an appetizing crust. 2. Peel and chop the onion. Grate the peeled carrots on the coarse side of a grater. 3. Add the onion to the browned meat and stir. After a minute, add the grated carrots, salt, ground black pepper, coriander, and bay leaves. 4. Cook everything together for 5 minutes, until the carrots soften. 5. Now add the sauerkraut, stir well, cover the pan, and braise for 15 minutes over moderate heat. 6. Meanwhile, shred the fresh cabbage, add it to the skillet, and stir everything together again. Braise the bigos for 1 hour, stirring from time to time. 7. Rinse the prunes, add them to the skillet, stir, and braise for 15 minutes. There's no need to cut the prunes. The bigos is ready to serve. Enjoy!
