Chanakhi with Beans in a Slow Cooker

Chanakhi, adapted for the slow cooker! Give it a go — it comes out delicious! As far as I know, classic Georgian chanakhi is made without beans, with meat making up about half of the ingredients. This time I'll suggest making it in a slow cooker (slow-braised and thick), with beans standing in for the protein. What do you think?

    1. Cook the beans ahead of time until soft — you'll need about a pint of cooked beans. Purée half of them (in a blender or meat grinder). Peel and wash all the vegetables: cut the potatoes into cubes, the carrots into rounds, and the onion into half-rings, and cut the meat into rough serving pieces. Peel and finely chop the garlic. 2. Put the onion and meat in the slow-cooker bowl, add the sunflower oil, and season with salt and pepper. Turn on the Sauté setting for 10 minutes. Once the meat and onion release their juices, add the tomato paste. 3. Add the potatoes, carrots, garlic, and beans to the meat and onion. Cover with water. Season with more salt and pepper if needed, and add the bay leaf. Set it to the Soup setting, or Beans if your cooker has one. If not, use Soup or Stew for 2–3 hours. You'll end up with a tasty, filling dish. 4. Serve with fresh herbs. Enjoy!
