Step 1:
Pour kefir (fat content 2.5%) at room temperature into a bowl, add sugar, salt and soda, beat in an egg.
Step 2:
Mix everything thoroughly with a fork.
Step 3:
Sift flour into a bowl through a strainer and begin to knead the dough. You can add flour in two steps - half, then the rest. I poured 250 grams, and left 25 on the back. When it comes together in a lump, we spread it on the work surface, which needs to be lightly dusted with flour. The dough should lag behind the hands and remain soft, without excessive flour. Leave it alone for 10 minutes, covered with cling film. The resulting dough is just enough for 5 sausages.
Step 4:
Roll out the rested dough into a rectangle about 3 millimeters thick. My rectangle came out measuring 22 by 32 centimeters. If the dough is still a little sticky, then sprinkle the table with flour, so that the dough does not stick.
Step 5:
Cut the dough lengthwise with a knife into 5 equal strips and pull them out a little so that they become longer.
Step 6:
Wrap the sausage dough in a spiral.
Step 7:
We spread the blanks on a baking sheet, which can (not necessarily!) be covered with parchment, but not lubricated with anything. Lubricate them with beaten egg yolk.
Step 8:
Bake in a preheated oven at 180 degrees for 20-25 minutes (approximate time) until blush and full readiness. I turned the baking sheet over several times so that the sausages baked evenly on all sides.
Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
So that the oven has time to heat up to the desired temperature, turn it on in advance (10-20 minutes before cooking).
