Step 1:
A few words about the ingredients. The cream in the photo is present purely symbolically - they should be in the refrigerator until the beginning of whipping. And the chocolate bar is larger than indicated in the recipe - 1 fragment will go into the dough for the cake, but I will plan chocolate chips for decoration from the back surface of the other three, so the chips are more beautiful. If someone does not have the opportunity to plan chips, you can just take granules for sprinkling
Step 2:
Put the oven on preheat to 180C. Melt butter and 50 grams of crushed chocolate in a water bath
Step 3:
Beat eggs with sugar into a light foam
Step 4:
Sift the flour, mix it into the egg-sugar mass
Step 5:
Add the melted chocolate and butter to the dough.
Step 6:
Oil the bottom of the mold and sprinkle with flour (I have a mold with a diameter of 16 cm)
Step 7:
Pour the dough into the mold and bake it in the oven at an average temperature of 160-180 degrees for 20 minutes. After that, prick the surface with toothpicks so that it does not break, and bake for another 10 minutes until ready.
Step 8:
Divide the cherry compote into juice and cherries (both will be required).
Step 9:
Add 2 bags of thickener to the cherry juice.
Step 10:
Cook the juice with a thickener according to the instructions on the bag, after it is ready, immediately pour the cherries into it and mix.
Step 11:
Remove the cake base from the oven and let it cool completely. Depending on the diameter of the mold (and the height of the resulting baking), cut into 2-3 cakes and drip cherry schnapps (or other alcoholic impregnation) on each of them. Who does not want to introduce alcohol - do not enter, although according to the recipe it is put in the CLASSIC Black Forest cherry cake.
Step 12:
Spread the cherry mass on the cakes.
Step 13:
Whisk the cream until it forms a very dense mass
Step 14:
Put a layer of cream on top of the first cake with cherries, put the second one on it, on top of the cherry layer - cream again.
Step 15:
"Cover the mounted" cake with cream on all sides.
Step 16:
Scrape the chocolate chips in small portions and sprinkle it on the cake. The top of the cake must be dusted, this is a feature of the Schwarzwalder. It is more difficult to sprinkle the side surfaces, this can not be done. Along the outer edge of the top of the cake, rings or roses of cream are squeezed out (a nozzle "asterisk"), in the middle of which you can stick cherries for beauty.
Black Forest cherry cake is probably the most famous recipe of German cuisine in the world. One of the tales about its origin says that it resembles the national clothes of the inhabitants of some settlements of the Black Forest: a dress as black as chocolate; a blouse as white as cream; and red "cherries" on the hat.
In any case, back in the 19th century in the Black Forest, a region in southwestern Germany famous for its dark spruce forests and plantations of a certain variety of cherries, there was a dessert of cherries soaked in local cherry schnapps served with whipped cream. And at the beginning of the twentieth century, a cake made of chocolate sponge cake soaked in cherry schnapps, with cherries and whipped cream (or white butter cream) appeared.
Be prepared for the fact that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
