A little baking soda also helps the peas break down. And one more tip for cooking peas faster: salt them at the end, about five minutes before they're done.

    Tip the peas into a pot and cover with cold water. To cook them faster, use a heavy-bottomed pot or a cast-iron one. Set it over medium heat and bring to a boil. Then lower the heat and cook the peas for 40 minutes.

After the soda, cook the peas another 15–20 minutes. Stir often so the porridge doesn't scorch, especially toward the end when little water is left. Salt the dish 5 minutes before it's done. The porridge is ready — enjoy!
