    So that the puff pastry does not rise much during baking, we put a sheet of baking paper on top of the dough and cover it with another inverted baking sheet. We put all this construction in a preheated 180oC oven and bake for 20 minutes.

    After the time has elapsed, we take the baking sheet out of the oven, carefully shift the cake onto the board and cut it once lengthwise and once across. There should be 4 equal parts. We transfer the cakes to the grill and let them cool completely.

    At this time we are preparing custard. Pour the milk into a ladle, put it on the stove and bring the milk to a boil, pour in the vanilla, mix and remove from the heat. Let the milk stand for 10 minutes. At this time, rub the yolks with the remaining sugar and corn starch. We transfer the egg mixture into a ladle with milk and put it back on the stove. Stirring constantly, bring the cream to thickening over medium heat. Then add the butter and mix thoroughly.

    Prepare the top layer of the cake with a pattern. To do this, first prepare the glaze: carefully mix the powdered sugar with lemon juice. Pour the glaze on the cake and carefully distribute it over the entire surface. On top of the melted bitter chocolate, we apply horizontal stripes. Then we carefully draw the lines perpendicular to the horizontal stripes with a knife, first from top to bottom, then from bottom to top, and so on.

The resulting cake is cut into 3 portion cakes. To make the cakes tastier, let them stand for a while so that the dough is soaked with custard.

The pattern of the top layer of this cake is very similar to the Alexander stripe, after which the cake got its name. But this is where the similarity of these two confectionery products ends. Instead of shortbread dough, layers of puff pastry are used, and custard on yolks is prepared as a filling. Well, at the final stage, the glaze is prepared, which includes powdered sugar and lemon juice. Thus, the cake acquires a light lemon flavor.
