Step-by-step cooking
Step 1:
Prepare the shortbread dough and prepare the necessary ingredients and inventory.
Step 2:
To make our pastries tender and crumbly, sift 350 grams of flour into a large bowl.
Step 3:
Add a pinch of salt, one teaspoon of baking powder, two hundred grams of softened butter to the flour and mix well with your hands until crumbs are obtained.
Step 4:
For the second part of the dough, add one chicken egg and one yolk to the bowl, the protein from which we will use to make custard for cakes.
Step 5:
Next, add 100 grams of powdered sugar to the eggs in a bowl, one teaspoon of vanilla sugar and beat well with a mixer until fluffy and airy.
Step 6:
Pour the liquid base for the dough into a large bowl with crumbs.
Step 7:
With our hands we form the dough into a single lump, which we put in a plastic bag and put in the refrigerator for 30 minutes.
Step 8:
Divide the dough into three parts and form a cake from the first one, which we roll out with a rolling pin to 0.5 cm thick. We make blanks for cake baskets, pressing the mold into the resulting cake.
Step 9:
Turn the workpiece over, press the dough into the mold and level, then pierce the dough at the bottom of the basket with a fork and put it in the refrigerator for 30 minutes.
Step 10:
We also make a tortilla from the second part of the dough, which we roll out and put into a mold, after which we form the dough in it and level it for the future mini-pie.
Step 11:
Roll out the remaining dough from the baskets into a thinner cake, squeeze out the figures with different molds and make the top for the pie.
Step 12:
Diced apple, add starch to the jam and mix to get the filling for the pie.
Step 13:
We pierce the dough at the bottom of the pie basket with a fork, spread the prepared filling and cover it with the cooked top, on which we place the squeezed figures. We put the mini-pie to bake in the oven, which was heated to 180 degrees for 30 minutes, turning off which we leave the pie to cool for another 10 minutes.
Step 14:
Roll out the remaining dough to the desired tortilla, squeeze out the blanks with molds and put them in a baking tray, add baskets and put them in the oven to bake for about 20 minutes at 200 degrees. Fill the baskets with sliced banana, add protein custard and decorate with chocolate on top.
