Step-by-step cooking
Step 1:
Prepare the ingredients for the strudel. You can use ready-made puff pastry yeast dough or cook it at home. This process is, of course, time-consuming and time-consuming, but sometimes you can work hard. Pour warm water into a glass, add a teaspoon of sugar, a tablespoon of flour and a teaspoon of dry yeast, mix and leave in a warm place to activate the yeast.
Step 2:
Put the softened butter in a bowl, chop it with a knife, pour sugar, sifted wheat flour, grind into crumbs.
Step 3:
The approaching sourdough (foam should appear on the surface of the mixture) pour into a deep bowl, drive in a chicken egg, pour in warm milk, add salt, mix until a homogeneous mixture.
Step 4:
Pour the liquid mixture into a bowl with sand crumbs and knead an elastic smooth dough. If necessary, you can add a little flour or water. We wrap the dough in plastic wrap and put it in the refrigerator for a couple of hours.
Step 5:
After the specified time, you can proceed to baking strudel. While the dough is in the refrigerator. Prepare the filling. Minced meat can be wound independently from pork and beef taken in equal parts, or use ready-made. Add salt and ground black pepper to the minced meat to taste. Onions are cleaned and cut into cubes. Peel the garlic from the husk and cut a couple of teeth into cubes.
Step 6:
Pour vegetable oil into the pan, turn on the fire. Fry the onion and garlic until transparent. We send minced meat to them, fry it for 15 minutes on medium heat, stirring occasionally. Remove the minced meat from the pan.
Step 7:
Chop the white cabbage into thin strips or cubes, put it in a frying pan where the minced meat was fried, you can no longer add oil.
Step 8:
Fry it until a little blush. Add salt, ground black pepper and other spices to the cabbage to taste, mix. Pour in a little water and simmer over medium heat for about 20 minutes.
Step 9:
Potatoes are washed, cleaned, cut into large pieces and boiled in salted water until tender. Part of the broth is drained. We make mashed potatoes, let it cool down a little.
Step 10:
We roll out the finished dough into a rectangular layer with a thickness of no more than 0.3 centimeters.
Step 11:
We spread the prepared filling on the dough, you can combine potatoes, meat and cabbage and mix or lay out layers, the essence does not change from this.
Step 12:
Roll up the dough with the filling into a roll.
Step 13:
Put it in a greased mold. We put it in a warm place for half an hour to rise. Lubricate with beaten chicken egg and sprinkle with sesame seeds. Bake in the oven, preheated to 180 degrees, for about 30 minutes.
Step 14:
We take the strudel out of the oven and serve it with tea or coffee to the table. As a rule, it is served to the table hot. Enjoy your meal!
