Ruddy, big, hearty! Cooking is easy and simple! A cake on kefir without yeast is similar in its molding to traditional Caucasian pastries. But the dough for it is prepared with the addition of soda, which is much faster. The filling of potatoes and cottage cheese is somewhat unusual, but it turns out very tasty. Try it!

    How to make a cake on kefir without yeast? Measure out the necessary ingredients for the dough. Kefir is suitable for any fat content. Take it out in advance so that it is not cold. Take odorless vegetable oil.

    Pour kefir into a bowl, add soda, mix. Leave the mass until numerous bubbles appear on the surface. This is a soda quenching reaction when interacting with lactic acid.

    Add salt and vegetable oil to the kefir. Mix it up.

    Sift flour into a bowl. Sifting will remove possible unnecessary particles from the flour and enrich it with oxygen. As a result, the pie will rise better during baking. Do not pour out all the flour at once, it may need less than the specified amount. It depends on the fat content of kefir and the properties of flour. If, on the contrary, the dough is not thick enough, add a little flour when kneading.

    Knead the dough. It should keep its shape well, but be soft and gentle. Wrap the dough in a bag or plastic wrap and leave on the table for 20-30 minutes. During this time, the gluten will swell, and the dough will be more pliable and elastic.

    Prepare the filling for the pie. Peel the potatoes in advance and boil in salted water until tender. Check the readiness of potatoes with a knife. If it's soft, it means it's ready. Drain the water and cool the potatoes. Cottage cheese can be taken of any fat content, depending on preferences.

    Wash the parsley and dill, dry well. Remove rough, thick twigs. Finely chop the greens. You can also take green onions or coriander.

    Mash the boiled potatoes. I did it with a fork. But if desired, you can make the structure of the filling more uniform. Then mash the hot potatoes with a mashed potato mash and cool. And pass the cottage cheese through a blender.

    Combine potatoes, cottage cheese and chopped greens. Add salt if necessary. Mix well.

    Roll out the dough on a floured table into a round layer 7-8 mm thick.

    Lift the edges of the dough and connect them over the filling. Pinch well.

    Turn the dough over and roll out gently, without strong pressure, forming a round pie. In the center, make a small hole for steam to escape.

    Beat the egg lightly until smooth and use a cooking brush to grease the pie on top. If desired, you can sprinkle the cake with sesame seeds. I have white and black.

    Bake the pie in a preheated 180C oven for 30-35 minutes until browned. The baking time and mode may not coincide with those indicated, be guided by the peculiarities of your oven. I got a pretty big pie with a diameter of about 30 cm.
