Buckwheat with chicken in a slow cooker

A quick, hearty everyday dish for the whole family! Buckwheat with chicken in a slow cooker is made just like pilaf, with buckwheat in place of rice. Browned chicken with vegetables and spices gives the dish a rich taste and aroma. It's much easier to make in a slow cooker — nothing scorches or boils over.

Cooking method

Cooking time: 45 min
  1. Step 1:

    Step 1

How do you make buckwheat with chicken in a slow cooker? Gather your ingredients. First sort through the buckwheat, picking out debris and any unhulled grains. I used chicken fillet, but any cut of chicken works — bone-in just makes it less convenient to eat. Wash and peel the vegetables. Choose your seasonings to taste.

  2. Step 2:

    Step 2

Wash the chicken and dry it well — extra moisture will keep it from browning. Cut the fillet into medium pieces, as for goulash.

  3. Step 3:

    Step 3

Heat the vegetable oil in the slow cooker bowl, setting the cooker to a mode suitable for sauteing. Frying the chicken with the vegetables will take 15 minutes with the lid open. Put the chicken pieces in the slow cooker and saute for 10 minutes, stirring with a wooden spatula.

  4. Step 4:

    Step 4

While the chicken fillet fries, cut the onion into quarter rings.

  5. Step 5:

    Step 5

After 10 minutes, once the moisture has cooked off and the meat is browned, add the chopped onion. Stir the meat and onion together and saute for another 3 minutes.

  6. Step 6:

    Step 6

Meanwhile, cut the carrot into small cubes or sticks, or grate it. Keep in mind that how you cut the carrot affects the final result: grated carrot turns to mush during cooking and blends evenly into the rest, while carrot cut into strips or sticks holds its shape.

  7. Step 7:

    Step 7

Add the cut carrot to the chicken and onion right away, season with salt and the spices, stir, and cook for another two minutes, then turn off the saute program. Or let it end on its own, depending on the model.

  8. Step 8:

    Step 8

Rinse the buckwheat well under cold running water. Then add it to the bowl with the sauteed ingredients.

  9. Step 9:

    Step 9

Stir the buckwheat with the chicken and vegetables.

  10. Step 10:

    Step 10

Pour 4 cups of water into the bowl with the buckwheat and chicken. Always use twice as much water by volume as buckwheat. Stir everything together again, now with the water.

  11. Step 11:

    Step 11

Close the slow cooker lid and set a porridge mode for 20 minutes.

  12. Step 12:

    Step 12

After 20 minutes, once the timer sounds, the buckwheat with chicken is ready. You can let it sit a little longer under the lid, or serve it right away.

  13. Step 13:

    Step 13

Spoon the hot buckwheat and chicken onto plates and serve for lunch or dinner. Fresh or canned vegetables and tomato juice make a good side.

  • For all the secrets of cooking buckwheat and how to choose it for the tastiest results, read the article "Plain old buckwheat. Do we really know all there is to know?"
  • Remember that the cooking time and mode in the recipe are approximate. All slow cookers work differently, and even identical models from the same manufacturer can behave a little differently. Before making a dish that's new to you in a slow cooker, read its manual carefully, then start by cooking dishes you already know before moving on to new ones, dialing in the mode and time for your own machine.
  • For cooking, it's best to use filtered or bottled water with a neutral taste. If you use tap water, keep in mind it can give the dish an unpleasant off-flavor.
