No-Bake Cookie Roll
A quick, tasty dessert from ordinary ingredients! A no-bake cookie roll will save the day when you don't have access to an oven. It's so simple to make that even a child can manage it. The farmer's cheese filling makes the roll not only tasty but wholesome too.

Step 1:
How do you make a no-bake cookie roll? Gather the ingredients. Take the butter out of the fridge ahead of time and let it sit at room temperature so it softens. Choose high-quality, natural butter with no vegetable fats. You can use any shortbread cookies. Use soft, full-fat farmer's cheese. I use homemade farmer's cheese.

Step 2:
Put the cookies in a blender or food processor and reduce them to crumbs. You can grind them loosely so that noticeable pieces remain, or grind them very fine. If you don't have a blender, crush the cookies with a rolling pin after putting them in a sturdy bag. Then pour the crumbs into a deep bowl so it's easy to mix everything. The bowl can be any material - glass, plastic, or metal.

Add cocoa and milk to the ground cookies. The cocoa should be natural too; don't use a drink mix like Nesquik.

Mix the ingredients thoroughly by hand. The mixture comes out fairly thick. If it's too dry, pour in a little more milk; if it's too runny, add more cookies.

Then line a board with plastic wrap and put the chocolate mass on it. Spread it out over the surface of the wrap, forming a rectangle.

For the farmer's cheese filling, combine the farmer's cheese, sugar, vanilla, and butter. Mix it all together. If your farmer's cheese is too grainy, blend it or push it through a sieve - then the filling will be more tender and smooth.

Spread the farmer's cheese filling over the entire surface of the cookie layer.

If you like, you can add a little seedless jam, preserves, berries, or dulce de leche to the filling. Lay it in a thin strip down the middle of the rectangle. But you can make it without that too.

Step 9:
Using the wrap, roll the layer up into a tight roll. Put the roll in the fridge for a few hours or in the freezer for 1 hour.

Once it's set, you can slice the roll with a knife. Put it on a plate and serve. Enjoy!
- The main flavor of the dessert depends on the quality and taste of the cookies and farmer's cheese. So choose these ingredients carefully. The farmer's cheese should be the freshest, with a pleasant tangy dairy aroma, and the cookies tender and crumbly.
