    How do you make a cheese and fish appetizer on chips? Gather the ingredients. You can use any hot-smoked fish - smoked bream, walleye, salmon, or squid. Either hard or semi-hard cheese will work. The main thing is that it's good quality, with no milk-fat substitutes. Besides olives, you can garnish the appetizer with cherry tomato halves or little gherkins. Use any mayonnaise, or make your own.

    Remove the bones from the fish if you can. Cut it into small cubes. If you want a smoother, more pâté-like mixture, you can chop the fish in a blender.

    Grate the cheese on a fine grater.

    Cut the olives in half and then into half circles.

    Dress the mixture with mayonnaise and stir. I didn't salt the filling, because there's enough salt in the cheese, the olives, and the mayonnaise. I'd suggest tasting your filling and deciding for yourself whether to add salt or not.

    Put 1 tablespoon of filling on each chip. Large chips like Pringles work best for this appetizer.

    Garnish the appetizer however you like. I garnished mine with olives and parsley. Serve it right away so the chips don't get soggy and lose their crunch. Enjoy!
