No-Bake Mascarpone Cheesecake

A tender, cool dessert - bliss in every spoonful! No-bake mascarpone cheesecake is especially welcome in summer, since you can decorate it with fresh berries. This one is topped with raised blackberries and a piped design made from those same berries. In winter, you can replace the blackberries with seasonal fruit and berries.

Cooking method

    How do you make a no-bake cheesecake? Gather the ingredients for the base. You can use plain or chocolate cookies. With chocolate cookies, the whole cheesecake looks much more interesting because of the color contrast.

    Melt the butter and let it cool. You can do this in the microwave or on the stove (in a water bath).

    Grind the cookies into crumbs in a blender.

    Pour the melted butter into the shortbread crumbs and mix.

    Grease an 18 cm springform pan with butter. If you have an acetate strip, line the sides of the pan with it - that makes the cheesecake easier to remove. Pour the shortbread crumbs into the pan and press them down to form the bottom and sides. Put the pan with the base in the fridge for 1 hour.

    While the base chills, gather the ingredients for the filling.

    Soak the gelatin in cold water and leave it for 15 minutes to bloom. Read the instructions on your gelatin's package for how to prepare it!

    Then warm the bloomed gelatin over low heat until it fully dissolves. But don't boil it!

    Whip the cold cream with a mixer to stiff peaks. For how to whip cream correctly, see the notes after the recipe.

    Separately, combine the mascarpone and condensed milk in a bowl and mix at low speed. There's no need to beat it hard or for long, or the cheese will split.

    Mix the mascarpone with the whipped cream, beating the mixture at low speed.

    Continuing to beat, pour the dissolved gelatin into the cream. The mixture will gradually thicken and become firm.

    Set aside 2 tbsp of the cream in a separate bowl - you'll need it for decorating. Spread the rest of the cream over the chilled shortbread base and smooth it out.

    To decorate the cheesecake, we'll need 2-3 blackberries (or any other berries you like) and the cream-cheese cream you set aside. Push the blackberries through a sieve.

    Mix the 2 tbsp of setting cream with the blackberry juice. Transfer the mixture to a piping bag and snip off the tip.

    Pipe a free-form design of blackberry cream onto the surface of the cheesecake. Put the cheesecake in the fridge for 6-8 hours until it's fully set.

    Before serving, remove the cheesecake from the pan, garnish with blackberries and mint, and cut it into portions. Enjoy!

  • For a dish with gelatin to work out, always soak the gelatin in cold boiled water first. The colder the water, the better. Sheet gelatin can simply be placed in a bowl of water. Before soaking powdered gelatin, rinse the dish with cold water first so the crystals don't stick to the bottom. It's important to pour the water over the powdered gelatin, not sprinkle the gelatin into the water - otherwise you'll get lumps. Then give the gelatin time to bloom (the exact time is on the package). Bloomed gelatin is heated to 70-80°C. It must never be brought to a boil! At 100°C the mass becomes stringy and viscous, the collagen protein breaks down, and the gelatin loses its gelling ability.
  • How do you whip cream properly? It's important that the cream is high-fat, at least 33%. The whipping bowl and the cream itself should be cold - keep them in the fridge for at least 1-2 hours. Beat with a mixer at the lowest speed, gradually increasing it. How do you know the cream is whipped enough? The creamy mass should hold its shape and not spread. Stop whipping at that point, or the cream will turn into butter.
  • Cream shouldn't be frozen before whipping - otherwise it will split during whipping and you'll get whey and butter! Buy only fresh chilled cream for this.
