Sweet Rice Porridge

- Rinse the short-grain rice thoroughly under plenty of running water until the water runs completely clear, then drain it in a colander. Take a heavy-bottomed pot (size it to how much porridge you're making), add a little water, stir in the rinsed rice, and set it on the stove. Turn the heat to high and bring it quickly to a boil, then lower the heat to the minimum. Salt the rice and add sugar to taste. Cook for 15–20 minutes, stirring now and then so it doesn't scorch. By the end, the water should have fully cooked off and the rice should be soft but not clumped together. Pour the milk into a separate pan and bring it to a boil, watching closely so you don't miss the moment — if you don't lower the heat in time, the milk can boil over and put out the flame. Pour the boiling milk into the pot with the cooked rice. Bring the porridge back to a boil and lower the heat. Cook with the milk for another 15–20 minutes, stirring constantly so it doesn't scorch. Taste and add more salt or sugar if needed. If you like, flavor the milky rice with your favorite spices (vanilla, cinnamon, and so on). Judge doneness for yourself — once the rice is soft and well cooked, turn off the heat. Stir butter into the finished porridge, mix well, cover, and let it rest for 20 minutes so the rice fully swells and soaks up the milk. Serve the rice porridge hot, garnished however you like. Round out this gentle dish with dried fruit, nuts, jam, fresh fruit, or any other topping you enjoy. Enjoy!
