Gluten-Free Pizza
A gluten-free diet and pizza can absolutely go together — read on! If you can't tolerate gluten, you can still make a great pizza. There's a worthy substitute for just about any ingredient. Follow this recipe and enjoy delicious pizza without the worry!

Step 1:
How do you make gluten-free pizza? Measure out the ingredients for the dough. You can use any gluten-free flour (amaranth, soy, chickpea, buckwheat). Warm the water slightly.

Dissolve the yeast and sugar in about 1/4 cup (50 ml) of the warm water. Let the mixture sit for 10–15 minutes, until the yeast activates and a foamy cap forms on top.

Combine the rice flour and cornmeal and sift them together.

Use a roomy bowl to mix the dough. Dissolve the salt in the rest of the water, pour in the yeast mixture, and stir.

Add the olive oil and stir.

Add the sifted flour mixture. Stir it in first with a spoon, then knead the dough by hand.

The dough comes out very soft and a bit sticky. Cover it with plastic wrap and let it rest at room temperature for 30 minutes.

Use any gluten-free toppings you like. I used homemade tomato sauce. You can swap the mozzarella for parmesan, cheddar, or feta. Any neutral vegetable oil works in place of olive oil. Pick tomatoes that are juicy but firm, so they hold their shape when sliced.

Step 9:
Boil the chicken breast in salted water until cooked through, then let it cool.

Step 10:
The dough barely rises as it rests — it just becomes a little fluffier to the touch. Grease the parchment with oil and shape the dough into a round base about 1/4 inch (0.5 cm) thick. This dough isn't stretchy or elastic, so it's easier to shape with your hands than with a rolling pin. Brush the surface with olive oil.

Spread on the tomato sauce and sprinkle with basil. Use any seasonings you like.

Shred the chicken breast or cut it into small pieces, then scatter it evenly over the dough.

Rinse and dry the vegetables. Slice the tomatoes into rounds and lay them over the chicken.

Seed the pepper and cut it into rough pieces. Add it on top of the tomato layer.

Step 15:
Grate the mozzarella on the coarse side of a grater, or cut it into thin slices.

Step 16:
Scatter the cheese over the top of the pizza.

Step 17:
Bake the pizza in an oven preheated to 350°F (180°C) for 15–20 minutes, until golden.

Cut the finished pizza into slices and serve. Enjoy!
- The amounts above made me a pizza about 9 1/2 inches (24 cm) across.
- The flavor is a little different from a regular pizza because of the crust. There's twice as much rice flour, but to my taste the cornmeal comes through the most.
- A tasty pizza with crispy edges and a wholesome topping.
- You can mix different flours to get a new flavor in the crust. Experiment!
