Broccoli, Crab Stick, and Egg Salad with Mayo
Filling and good for you, with a great balanced flavor! This salad of broccoli, imitation crab, and egg is a pleasant surprise. Dress it with homemade mayonnaise, sour cream, yogurt, or oil with mustard and lemon. A perfect, simple light dinner!

Step 1:
How do you make broccoli, egg, and crab stick salad? Gather all the ingredients on the list. You can use fresh or frozen broccoli.

First, boil the eggs. Put them in a saucepan, cover with cold water, and set on the stove. Bring to a boil over high heat, then lower to a moderate boil and cook the eggs for 10–12 minutes. Drain and cool them completely.

Thaw the crab sticks at room temperature.

Rinse the broccoli and break it into small florets.

Boil the broccoli in lightly salted water for 2 to 5 minutes. Don't overcook it, or it'll go soft and mushy. If using frozen broccoli, cook it according to the package directions.

Drain the cooked broccoli in a colander, let it cool, then transfer it to a deep salad bowl.

Peel the cooled eggs and cut them into small pieces — I cut mine into little cubes.

Add the eggs to the broccoli.

Cut the crab sticks into thin rounds or small cubes, whichever you prefer.

Add them to the salad bowl.

Add the mayonnaise and season with ground pepper. If you like, sprinkle finely chopped fresh herbs on top. How much mayonnaise? Entirely up to your taste — I don't like too much mayo in a salad, so I always go light.

Toss the salad thoroughly before serving and taste it; add more salt if needed. The salad is ready to serve!

- The salad looks neat and pretty if you cut all the ingredients into pieces of the same size and shape (cubes, for example).
- How do you hard-boil eggs? To keep them from cracking, place them in cold water and bring it to a gentle boil. Cook for 9 minutes after the water boils, then drain and cover with cold water to cool. The sudden temperature change makes them easier to peel.
- How do you choose good imitation crab? Always check the expiration date. Surimi (minced white fish) should be the first item on the ingredient list. Important: don't buy a package with ice crystals on it — that's a sign it was refrozen. Fresh sticks should be free of gray or yellow spots, firm, and slightly moist. If they feel sticky, they've gone bad.
- It's best to make the mayonnaise yourself — it'll be tastier and better for you; look for good homemade mayonnaise recipes. You can also use sour cream or plain yogurt as the dressing instead of mayonnaise, on their own or mixed with mayo in any ratio you like, which lightens the dish.
