Navy-Style Vermicelli with Ground Beef

Make vermicelli for dinner — a real winner! Navy-style vermicelli is a familiar childhood favorite for many.   • Everyone feels a wave of nostalgia now and then — for childhood, for family, for grandma's or mom's cooking. The good news is it's an easy fix: pull out an old recipe notebook, flip through it, and make a favorite childhood dish. This recipe walks through one such nostalgic dish. It's best to make the meat for the vermicelli yourself from fresh meat, so you can be 100% sure of the quality. 1. Cook the vermicelli according to the package directions. The dish tastes better with good-quality vermicelli, ideally made from durum wheat. 2. Drain the cooked vermicelli in a colander and rinse it under cold running water — this stops the cooking and keeps it from clumping. 3. Peel the onion and cut it into very small dice. Peel the garlic and press it through a garlic press. Put the onion and garlic in a skillet, add the vegetable oil, and set it over the heat. 4. Sauté the onion and garlic for 1–2 minutes, until fragrant. Add the ground beef, breaking it up with a spatula into small pieces, and fry for 10–12 minutes, stirring. 5. Add the tomato paste and stir. Cook for 2 minutes, then pour in about 1/3 cup (100 ml) of hot water, season with salt and pepper to taste, and simmer for 5 minutes. 6. Add the vermicelli to the skillet and cook everything together for another 5 minutes. Before serving, sprinkle with fresh herbs and freshly ground black pepper. Enjoy!
