Peel the carrots and rinse them under running water. 2. Put the carrots in a pot of a suitable size and cover with water. 3. Set the pot over low heat and cook the carrots until half done. 4. Lift the carrots out of the water onto a plate and let them cool. 5. Cut the cooled carrots lengthwise into thin strips. 6. Line a baking sheet with parchment and arrange the carrots in a single layer. 7. Drizzle them with olive oil and sprinkle with your favorite dried spices. 8.
