No-Bake Bounty Roll
A cookie dessert with buttercream and coconut. A very tasty roll for tea that's reminiscent of the popular candy bar. Making the roll is simple but a bit fiddly, especially when rolling it up — the main thing is not to rush. A great alternative to candy.

Step 1:
We're making a no-bake Bounty roll from cookies, shredded coconut, butter, and condensed milk, with cocoa powder, sugar, and powdered sugar added. Gather these ingredients from the list.

Use baked-milk or plain sugar shortbread cookies. Break them into pieces, put them in a food chopper, and add the sugar and cocoa powder.

Grind the cookies with the sugar and cocoa for 20–30 seconds into a fine, even crumb.

Tip the crumb out of the chopper into a bowl. Bring the water to a boil and pour half a cup of the boiling water into the crumb. Mix it first with a spoon.

Then knead a firm dough by hand — it should feel about as firm as shortbread dough.

Next, make the filling. In a separate bowl, combine the shredded coconut, powdered sugar, softened butter, and condensed milk.

Mix the coconut-butter filling well with a spoon, or with a mixer if you like.

Lay a sheet of baking parchment on the counter and roll the cookie base out on it. Roll it into a rectangle about 5 mm thick; keep in mind you'll be rolling it up, so the edges should be even and neat.

Spread the thick filling over the rolled-out base, distributing it evenly across the whole surface.

Lifting the parchment from one edge, carefully and slowly roll the log up.

Wrap the finished roll in the parchment and put it in the freezer for half an hour.

Step 12:
After half an hour, take the well-chilled Bounty roll out of the freezer and unwrap it.

The chilled roll slices beautifully. Arrange the slices on a plate and serve. Gorgeous and incredibly delicious.
