Hearty Okroshka

An easy soup with big flavor. Okroshka is the real centerpiece of a summer table — no summer feels complete without it, at least in households that love Russian cooking. This "hearty" version differs a bit from the classic, so it's a welcome change of pace. The whole secret is using three kinds of meat, which makes the soup genuinely filling while keeping it summer-light.

Cooking method

    Cut the cooked meats and ham into small dice.

    Dice the fresh cucumbers too. Finely chop the fresh herbs, then mix them with the salt and grind them together until they release their juice.

    Stir the herb mixture into the sour cream. Combine all the diced vegetables and meats, toss gently, and divide among the bowls.
