  • Start by whipping the yogurt and sour cream together in a blender (you can swap the sour cream for an equal amount of skim milk with no trouble). Go with plain yogurt — no fruit, no added sugar; if you have a yogurt maker and can make your own, even better. Salt the mixture, then stir in the minced garlic and pepper. Stirring gently, drizzle in the vegetable oil in a thin stream. Now add the diced cucumbers (grating them works fine, too) and some chopped fresh dill. Chill it in the fridge for a little while. When it's time to serve, scatter finely chopped nuts over the soup.
