  • Pasta with mushrooms is one of Italy's most beloved dishes — incredibly tasty, with a wonderful aroma! If you love mushrooms, make this pasta. A quick 15-minute dinner of spaghetti and mushrooms is sure to please the whole family. Spaghetti was born in Naples and owes its name to Antonio Viviani, who dubbed it so in 1842 for its resemblance to lengths of string (Italian spago). In the town of Pontedassio, near Genoa, there's even a Spaghetti Museum with hundreds of recipes for seasonings and sauces, along with a notarized deed from the Genoa archives, dated February 4, 1279, that attests to a dough-based food called "macaroni." The traditional home of the "pasta festival" is the town of Gragnano, near Naples — perhaps because documents found there, dated 1502, describe the making of "maccaroni," which would go on to become one of the world's most popular foods and a symbol of Italy. Today the Gragnano area is home to as much as a tenth of all Italian pasta factories, which ship three million tons of pasta to markets across Europe, Asia, the Americas, and Australia.
