Step-by-step cooking
Step 1:
Prepare everything you need for cooking. Take the pork brisket chilled, which has not yet been frozen. Otherwise, when defrosting, all the juices will come out of it and the finished dish will turn out dry. I like to use brisket with enough meat. The small amount of fat that is in it is quite enough for the juiciness of the piece.
Step 2:
Rinse the pork belly in running water and dry it well with a paper towel to remove all excess moisture from the surface of the piece. Peel the garlic from the husk. Make slits on the sides of the brisket with a sharp knife and insert garlic cloves. If the garlic cloves are very large, then you can cut each clove into 2-3 parts.
Step 3:
Then sprinkle the brisket pieces with salt, ground pepper and spices to your liking. I used paprika. Rub salt and spices with your hands into a piece.
Step 4:
Put the prepared brisket on a sheet of foil. Put a few leaves of bay leaf on top.
Step 5:
Wrap the brisket tightly in foil so that there are no holes left anywhere. If necessary, you can take another sheet of foil. Place the wrapped piece in a metal baking dish and put it in the oven, preheated to 190 degrees for 1.5 hours. Why the metal form? For dry baking, it is best suited. Ceramic or glass can crack from excessive overheating. Be guided by your oven.
Step 6:
Due to the fact that the piece is tightly wrapped, it will not fall apart when cooking. After the specified time, remove the mold from the oven. Use a sharp knife to cut through the foil and let it stand for a couple of minutes. During this time, the heat will come out of the dish and it can be transferred to the dish.
Step 7:
The finished brisket can be immediately cut into pieces and treated. And you can put it in the refrigerator until it cools down completely. When cooled down, it will be convenient to cut it into thin slices for sandwiches. Enjoy your meal!
