Soy Sauce Marinade for Kebabs
A versatile marinade for meat, fish, and vegetables! A marinade based on soy sauce and garlic that works for all kinds of kebabs: chicken, meat, fish, and vegetable. Easy-to-find ingredients and a short marinating time make this marinade indispensable in grilling season!

Step 1:
Gather all the ingredients. Pay special attention to choosing the soy sauce. There are a lot of cheap imitations of this product in stores now, so choose a naturally brewed soy sauce. Even better, use a soy sauce meant for marinades - it can stand up to heat.

Step 2:
Pour the soy sauce into a small bowl. We only need the juice from the lemon, so you can use store-bought lemon juice - you'll need 3 tablespoons. If you decide to squeeze it straight from the lemon, wash it first in hot water - it'll give up more juice - and use a small sieve so no seeds get into the marinade.

Step 3:
Add a little pepper. I use a blend of hot ground peppers, but it can be a single pepper. You can also add some of your favorite seasonings: I really like fenugreek or khmeli-suneli. But go by your own taste!

Step 4:
Pour the vegetable oil into the marinade. It can be any vegetable oil, really, but I'd avoid oils with a strong smell or taste, like unrefined sunflower or olive oil. In general, I really like sesame oil in marinades.

Step 5:
Add the minced garlic clove. I pressed it through a garlic press, but you can grate it on a fine grater or just chop it with a knife. If you don't have fresh garlic, garlic powder will work too.

Step 6:
Mix all the ingredients well. You can store this marinade in the fridge in a sealed container for up to 7 days; just stir it before using. Marinating time for meat with this marinade is 4-24 hours; for fish, 1-12 hours; for vegetables, 1-3 hours. This marinade also works not just for kebabs but for steak or chops, too.

- Since everyone's tolerance for salt, sweetness, bitterness, heat, acidity, and spice is different, always add spices and seasonings to your own taste! If you're using a seasoning for the first time, keep in mind that some are especially easy to overdo (chili pepper, for example).
