Kystyby on Kefir

A simple, delicious dish from the Tatar kitchen. Give it a try! It's a very easy dish — and yet filling and tasty. I often make kystyby (a Tatar folded flatbread) as a snack, and sometimes as a full dinner. My husband loves these flatbreads. Be sure to try them!

    1. Boil the potatoes in salted water, drain, and mash them with the milk. 2. Stir the butter into the mash. 3. Combine the kefir with the salt and baking soda, then work in the sifted flour. 4. Divide the dough into 12 equal pieces. 5. Roll each piece into a thin round and cook in a dry skillet, about 1 minute per side, until lightly golden. 3. Stack the finished flatbreads and cover them with a towel. Let them cool and dry out a bit. 4. Once the flatbreads have dried slightly, spoon the mashed potatoes onto one half, fold the other half over, and brush with melted butter. Enjoy!
