Beef Stroganoff with Lingonberries

Tender meat with the aroma of wine and fresh lingonberries. Lingonberries and beef make a wonderful pairing.

    1. Cut the beef into long strips about 2 x 1/2 inches (5 x 1 cm). 2. Heat the vegetable oil in a deep skillet and fry the beef with salt and pepper until it develops a golden crust. 3. Peel the onion and add it to the meat along with the bay leaves. 4. Pour in the vegetable broth and red wine, and simmer over low heat for about 25 minutes. 5. Whisk the flour into a little water and pour it into the skillet. Stir well and simmer for another 5 minutes or so. 6. Rinse, pick over, and dry the lingonberries. Blend them with the sugar until smooth. 7. Stir the lingonberry purée into the meat and simmer for about 20 more minutes. Taste and add more salt and pepper if needed. It's best served with boiled potatoes.
