Kurzemes Strogonovs (Latvian Braised Meat)

Latvian cooking is rich in wonderful recipes! This dish, meat prepared the Latvian way, is named after Kurzeme, the region where it was created. You won't find this exact combination in every restaurant — but since Latvian cuisine grew out of the peasant villages, its food is first and foremost hearty and made from the products of a working farm. After all, what does a farmer need? He comes in from the field for lunch, eats his fill, washes it down with cranberry drink, and heads back out until evening. Kurzemes strogonovs is exactly the kind of meal for that. And it's not difficult to make at all.

  • Pound the pork and beef lightly to tenderize them, cut them into oblong bite-sized strips, and fry in a skillet along with the smoked loin. Finely chop the onion and add it to the meat, giving it time to cook through without burning. Finely chop the pickles too, and stir them in once the meat is nearly done. Then whisk a tablespoon of flour into some cold meat broth and pour it into a separate skillet. Season with salt and pepper and stir in the sour cream. Now plate up a portion of the kurzemes strogonovs and spoon the sauce over the top. It pairs beautifully with boiled potatoes — though with meals like this, you can probably forget about a trim waistline.
