Rotterdam Slices (Open-Faced Hot Sandwiches)
Hot open-faced sandwiches that simply melt in your mouth! The amounts here are for a single serving, but don't worry too much about the exact grams of ham, cheese, and tomato — just use one piece of each per slice of bread. These Rotterdam slices make a great last-minute snack: when there's hardly any food in the house but you want a quick bite without spending much time in the kitchen, this Dutch classic is just the thing.

Cooking method
- First, toast the slices of white bread, then spread each one with butter and a little mustard. Top each slice with ham, cheese, and a round of tomato. Sprinkle on a bit of red pepper and put them in the oven to bake. The Rotterdam slices are ready as soon as the cheese starts to melt — take them out and scatter fresh herbs over the top. I don't recommend using a toaster for the bread or a microwave for the baking; the flavor just won't be the same.
