As for Latvian meat products, the most common are pork, and less often beef with veal, and poultry.
When Latvian cooks prepare national dishes, they make wide use of herring, sprat and Baltic herring.
Most smoked and salted pork dishes here are preferably cooked and served with a variety of Latvian vegetable side dishes.
As for the first courses of the national Latvian cuisine, today the most popular in Latvia are, above all, the sour-milk soup, the bread soup, and also putra and cabbage.
You may ask — what is this putra? We'll explain: it's a thick Latvian pottage made from various grains (mainly pearl barley), seasoned with milk, or with meat and lard. And Latvian cabbage is a national dish made here from head cabbage. Among other things, it can also be made from a wide variety of fresh and pickled vegetables, beet tops, sorrel and a number of wild plants.
Latvian cooks make fairly wide use of peas and beans in their cooking. Thick porridge made from peas and beans, as well as from pearl barley, is considered a favorite dish of Latvians. A very tasty food is boiled peas with fried bacon, and round dumplings made from peas or beans with buttermilk or kefir. All of Latvia loves to make fried hemp mass — Latvian kaņepju, bacon pies, black pudding, Jāņi cheese from cottage cheese, buberts (semolina porridge with whipped cream) and much more.
As for drinks, black coffee and Latvian beer are considered very popular among Latvians. In the heat, the refreshing drink sbiten quenches thirst wonderfully. Here it's made from Latvian rye flour, diluted with water and left to ferment.
