  • For this unusual dish, cut the cleaned squid — already gutted and skinned — into thin strips. For the coating, combine the flour, chili powder, and sea salt and mix well. Cut the chili pepper lengthwise into quarters and deep-fry them. Dredge the squid strips in the pepper-and-salt mixture, then shake them in a sieve to knock off the excess flour so they don't stick together. Pour sunflower or olive oil into a skillet and heat it, covered. Slip the squid into the hot oil and fry for a few minutes, until golden. You end up with delicious battered squid, fragrant with chili and sea salt. Even though the recipe comes from Chinese cuisine, any home cook can pull it off. Arrange the squid on plates and garnish with parsley or dill, fresh lemon, or the fried chili peppers.
