  • For this Chinese dish, peel the ginger, the onion, and the garlic and cut them into small slices. Clean and rinse the red bell pepper and the chili pepper, then cut them into small pieces. Wash the leek and cut it into large pieces. Soak the noodles in hot water for one minute; as soon as they turn translucent, drain them in a colander and rinse under running water for a few minutes. Keep the mussels in a little water, and as soon as they begin to open slightly, lift them out and quickly pry them the rest of the way open by hand. Once everything is prepped, pour peanut oil into a deep, large wok or skillet and heat it thoroughly over high heat. When the oil is hot, add the ginger and garlic first, then the oyster sauce and a little sugar. You can also splash in a little red wine for extra flavor. Add the noodles and mussels. Stir-frying means fast cooking over high heat — and since this dish is called stir-fried mussels, that's exactly what it is: mussels tossed with vegetables and fragrant seasonings. Serve the mussels hot. Enjoy!
