Omelet with Tomatoes and Celery

A tasty, wholesome, and filling breakfast that comes together fast. You can add milk to make it even more tender — I left it out on purpose so the omelet would be denser. Since there isn't much celery, you only catch a hint of it, just enough to brighten the dish. The tomatoes, onion, and cheese all pull their weight too. Breakfast for a family of 3–4.

  1. Step 1:

    Step 1

    Crack the eggs into a separate bowl. Add the salt and spices and whisk everything together. Finely chop the onion and celery. Cut the cheese into small cubes, and cut the tomatoes into wedges.

    Heat the butter with a little olive oil. Sauté the onion and celery until golden. Add the tomatoes and stir constantly. Once the tomatoes have softened, pour in the beaten eggs and stir to distribute everything evenly. Add the diced cheese and cover with a lid.

    Cook over medium heat for about 10 minutes. (Watch that the bottom doesn't burn.)
