Chicken Breast with Mushrooms in Cream Sauce
A delicious, fragrant, and really satisfying dish! Chicken breast with mushrooms in cream sauce turns out wonderfully soft and tender. The meat soaks up the cream and takes on great flavor from the spices. You can cook the breasts whole or cut them into pieces!

Step 1:
How do you braise chicken breast with mushrooms in cream sauce? Get everything you need together first. You can use any mushrooms you like — I'll be cooking with fresh cremini. I recommend heavy cream: the higher the fat content, the thicker and creamier the sauce.

Step 2:
Rinse the chicken breasts under running water and pat them dry with a paper towel to remove excess moisture. Pour a little vegetable oil into a hot skillet and sear the breasts on both sides until golden. Then lower the heat, cover the pan, and let the breasts cook over low heat for about 15 minutes. The meat will release a little liquid, but you can add a splash of water if needed.

Step 3:
In another skillet, sauté the finely chopped onion for a minute or so, until soft.

Rinse the mushrooms and cut them into slices. Add them to the onion in the pan and cook everything together for another 3–5 minutes. The mushrooms will shrink as they cook.

Now pour the heavy cream into the pan. Add the garlic pushed through a press. Season with salt and spices to taste.

Step 6:
Add the seared breasts. Stir everything together and simmer for another 5 minutes. Your chicken breast with mushrooms in cream sauce is ready! Plate it up and serve.

Round out the dish with some fresh vegetables. Enjoy!
- To keep your eyes from stinging when you slice onions, rinse the onion and the knife in cold water. And to keep your cutting board from soaking up that oniony smell, rub it with a slice of lemon before you start.
- Buy fresh, medium-sized mushrooms — snowy white, without spots, bruising, or any smell of rot. They shouldn't feel slippery. Rinse them well under warm or cold running water to wash off any grit, and trim away any bad spots. Tiny mushrooms under an inch don't need peeling; a good rinse is enough. Larger ones are best peeled of their outer skin.
