Rice with Cabbage in a Slow Cooker
Rice with cabbage in a slow cooker—fast and delicious! Don't forget to serve it with sour cream or garlic mayonnaise, aioli or another savory dip, and some fresh bread or a baguette. Stewed rice with cabbage is just as good for lunch as it is for dinner.

Step 1:
Gather the ingredients. Peel the onion and rinse it under water. Remove the outer leaves from the head of cabbage.

Put the rice in a deep bowl, cover with cold water, and rinse. Drain and repeat, rinsing until the water runs clear. This washes the excess starch out of the grains.

Add the rinsed rice to the slow-cooker pot. Many people make rice with cabbage a little differently, first sautéing the onion with the rice, then adding the chopped cabbage, water, and tomato paste. That method calls for the rice to be parboiled first. In this version the onion isn't sautéed—it stews right along with everything else, which makes the dish lighter, juicier, and more aromatic.

Pour in hot water, add a little salt, and drop in the bay leaves. Set the cooker to the "Rice" or "Porridge" program for 20 minutes if you used hot water, or 30 minutes if you started with cold water. Close the lid.

Shred the cabbage into medium-thick slices. As soon as the cooker beeps, add the shredded cabbage to the pot.

Add the tomato paste. You can swap it for canned peeled tomatoes, tomato juice, ketchup, and the like.

Cut the peeled onion into half-rings or small dice and add it to the pot. You can use green onions, leeks, and so on instead.

Season the dish with salt and pepper to taste. Some cooks also add ground paprika or dried thyme. Pour in the vegetable oil, but make sure it's a neutral, odorless oil—otherwise the whole dish will taste oily.

Stir everything gently so the cabbage and onion settle into the rice-and-tomato broth. Set the cooker to the "Stew" program for 15–20 minutes and close the lid. Cook until it beeps.

When it does, carefully crack the lid and let the steam escape. You can stir a little butter into the finished dish to round out the flavor and aroma.

Spoon the rice and cabbage into bowls or deep plates, garnish, and serve hot.
