Beef in Cream Sauce

Juicy, tender beef in a silky cream gravy. I've loved beef with all kinds of sauces and gravies since I was a kid, and here's another good one for the collection. I always make about 1.5 to 2 times more gravy than called for. Mashed potatoes and pasta are ideal on the side. If you like, add a sliced onion while you sear the meat.

    Wash the beef, pat it dry, and cut it into small pieces.

    Add the meat to a hot skillet, season with salt and pepper, and sprinkle with a little caraway if you like.

    Sear the beef quickly in the sunflower oil, about 3 minutes, to lock in its juices.

    Stir the potato starch into a little cold water.

    In a saucepan, combine the sour cream and cream. Stirring, bring the mixture to a gentle boil over low heat.

    Season the sauce with nutmeg, salt, and pepper.

    Pour in the dissolved starch. Cook the sauce over low heat until it thickens.

    Add the cream sauce and the tomato sauce to the skillet with the beef.

    Cover and simmer the beef for about 40 minutes. If the sauce thickens too much before the beef is tender, add a splash of water and keep simmering.

  • Every oil is good only up to a certain temperature—its smoke point—beyond which it starts to burn and forms harmful compounds, including carcinogens. Choose an oil suited to the heat you're cooking at, and use a refined oil for searing.
  • Note: the wrong pan can ruin even the best recipe, so pick a skillet that suits the dish.
