Cabbage Salad with Lemon Dressing
The brightest, healthiest, most vitamin-packed salad — it tastes like summer! This crisp, fragrant salad of young cabbage with a tangy dressing comes together fast and couldn't be simpler. Serve it as a standalone snack or alongside potatoes, meat, and more. Perfect for a meatless meal, too.

Step 1:
How do you make a cabbage salad with lemon dressing? Gather all the ingredients listed in the recipe. For this salad it's best to use young cabbage — its leaves are crisp, tender, and juicy.

Remove the bruised outer leaves from the cabbage. Rinse the head under running water and pat it dry with paper towels to remove any leftover moisture. Shred the cabbage into thin strips and put it into a deep, appropriately sized salad bowl.

Peel, rinse, and dry the carrot. Grate it on a coarse grater or a julienne slicer for Korean-style salads. Add it to the cabbage.

Wash the cucumber. Peel it if needed. Slice it into thin pieces and add it to the bowl.

Finely chop the young green onion. This time I used half a red salad onion.

Make the lemon dressing. Squeeze the juice of one small lemon into a deep bowl. Add olive oil, mustard, honey, and spices to taste. Dried Provençal herbs, basil, and sweet paprika round out the dressing nicely. Whisk everything together until smooth. If you like, you can add some pressed garlic to the dressing.

Pour the dressing over the salad.

Finely chop the dill or parsley and add it to the salad. Salt to taste and toss everything well.

- If the cucumber skin isn't tough, damaged, or bitter, there's no need to peel it.
