- Gather the ingredients. Eggs are the simplest, most affordable, and most versatile ingredient for any appetizer or salad—they go with just about anything, including canned tuna and pickles. The longest part of making these canapés is hard-boiling the eggs. Many doctors recommend washing eggs with soap before cooking to avoid pathogens like salmonella that may be on the shell. Cook the eggs over medium heat for 15 minutes from the time the water boils. The yolk should be fully cooked so it isn't runny, but don't overcook it—prolonged boiling can give the yolk a bluish tinge that won't look nice on the appetizer. Plunge the eggs into ice water and leave them to cool. Take the eggs out of the water, peel them, and cut them into rounds.
