  • This is our traditional holiday herring salad in a new, eye-catching form. It's just as easy to make, but the unusual presentation will surprise your guests. I'm not claiming this is the classic, traditional recipe—my own family actually prefers the original—but when I want to dress up the holiday table, this is the version I reach for. Since the ingredients are the same, the flavor is very close to the classic. Depending on the size of the vegetables, I use anywhere from 15 to 25 g of gelatin. If you've worked with gelatin before, it's easy to dial in the right amount for the dressing. I list 25 g here because my beets and potatoes were especially large this time and my usual amount wasn't enough, so I had to make more. With that amount, the "cake" held together perfectly. If the amount of mayonnaise seems like a lot, you can cut it back and add a little water in its place for a lighter result. IMPORTANT: once made, keep the gelatin dressing somewhere warm—I set it near the stove or a radiator—so the gelatin doesn't set before you use it. If you like onion, add it to the herring before pouring on the dressing. Cut the vegetables into cubes; they look prettier when sliced. This time I cut them larger than usual—I think smaller or thinner works better. If you don't have hours to wait, you can speed things up: put the salad in the freezer for 1–1.5 hours, then in the fridge for 30–60 minutes to thaw. Still, 4 hours in the fridge is best.
