Homemade Almette-Style Cream Cheese
A wonderfully delicate appetizer made at home! Heavenly! Guests on the doorstep and you need to whip up something fast? Here's an easy recipe for Almette-style cream cheese. The ingredients are affordable and simple. The result is a hearty, tasty, fragrant appetizer. You and your loved ones will be delighted!
Cooking method
-
Step 1:
Get the ingredients listed in the recipe ready. You'll need a mild, non-sour farmer's cheese with at least 18% fat. Don't use a coarse-grained product — it won't work for this recipe. Take the butter out of the refrigerator ahead of time so it has a chance to soften.
-
Step 2:
Put the farmer's cheese into a blender. Process it into a soft, smooth mass. If you don't have a blender, you can use a chopper or simply run the cheese through a meat grinder twice fitted with a fine grate.
-
Step 3:
Wash the fresh cucumber. Pat it dry with paper towels to remove excess moisture. Cut it into rough pieces. You can leave the peel on if it's undamaged. Add the cucumber to the cheese. Blend again until smooth.
-
Step 4:
Add the washed and dried parsley (or dill) to the cheese mixture. Blend once more until smooth.
-
Step 5:
Last, add the softened butter (at least 73% fat). Good-quality butter will give the dish a creamy, delicate flavor. Blend the contents thoroughly.
-
Step 6:
Season with salt. Taste it and adjust the seasoning to your liking.
-
Step 7:
Your homemade Almette-style cheese is ready. Cut a baguette into thin slices. You can also use crispbreads, tartlet shells, or white bread. Spread the cheese (about 1 tsp) in a thin layer. Garnish the top with a parsley leaf, a cucumber slice, or an olive. You've made a little one-bite canapé — a great option for a buffet table.
-
Step 8:
This cheese is great for breakfast, for dressing up festive appetizers, or for snack sandwiches. Help yourself! Enjoy!
- You can build on the recipe by adding a celery stalk to the ingredients. It too should be chopped and added to the cheese mixture along with the cucumber. Celery adds a piquant note to the flavor. You can replace it with napa cabbage (1 medium leaf). Instead of cucumber, you can add a mild ketchup. Some recipes suggest adding bell pepper, garlic, or pickled button mushrooms. If the cheese mixture comes out a little dry, add full-fat sour cream or plain yogurt. In short, creativity is welcome here.
- A festive version of the appetizer with Almette-style cheese: Fill tartlet shells with the prepared cheese mixture. Cut lightly salted red fish into thin slices and roll them into tubes. Place them on top and garnish with herbs. Very tasty and elegant!
