Cooking method
We separate the green part with leaves from the Peking cabbage. The white base of the leaves is too rough, it is better to leave it for some other dish.Delicate green leaves are finely chopped. The thinner the slicing turns out, the more tender and beautiful the salad will be as a result.
To prepare a tender salad with a pear, we use chicken breast. Other parts are not so soft and juicy, besides, cutting meat from bones complicates the process.
Remove the skin from the chicken breast, if there is one, and cut the meat into thin strips. In a deep bowl, in which we will mix the salad, combine the chopped cabbage and chicken.
A pear for a salad must be ripe and sweet, but in no case over-ripe. When slicing, the fruit should keep its shape and not fall apart. We do not peel the peel. We cut the pear into plates, get rid of the seeds and the core, cut into strips and send it to the salad.
Walnuts give a special taste to the dish. We grind the nuts between our palms to rid them of excess husks, which can fall off and spoil the finished look of the dish. We break the nuts to chop them a little, and add them to the salad.
If desired, add salt, but keep in mind that smoked chicken already contains salt and additional may not be required. Stir all the ingredients and proceed to the preparation of the dressing.
We prepare salad dressing separately, and we will add it later, already in a mixed form. In a deep dish, combine ground black pepper, French mustard in grains, vegetable oil and mix until smooth. We send the dressing to the almost ready salad and mix it so that it gets into all corners and impregnates each leaf.
The Beauty salad is ready, it can be served in a large salad bowl, but it is better to put it on a small plate and decorate with quarters of walnuts to give a festive look.
