Mayo-Free "Beauty" Salad with Napa Cabbage and Pear

  • Separate the green, leafy part from the napa cabbage. The white base of the leaves is too tough — it's better to save it for some other dish. Finely shred the tender green leaves. The thinner you slice them, the more delicate and attractive the finished salad will be. For a tender salad with pear, we use chicken breast. Other parts aren't as soft and juicy, plus cutting the meat off the bones complicates the process. Remove the skin from the chicken breast, if there is any, and cut the meat into thin strips. In a deep bowl — the one you'll mix the salad in — combine the shredded cabbage and chicken. A pear for this salad must be ripe and sweet, but by no means overripe. When sliced, the fruit should hold its shape and not fall apart. Don't peel it. Slice the pear into thin pieces, remove the seeds and core, cut it into strips, and add it to the salad. Walnuts give the dish a special flavor. Rub the nuts between your palms to rid them of excess papery skin, which can flake off and spoil the finished look of the dish. Break the nuts to crush them a little and add them to the salad. Add salt if you like, but keep in mind that smoked chicken already contains salt, so extra may not be needed. Stir all the ingredients and move on to making the dressing. We make the dressing separately and add it later, already mixed. In a deep bowl, combine the ground black pepper, French whole-grain mustard, and vegetable oil, and mix until smooth. Add the dressing to the nearly finished salad and mix it so it reaches every corner and coats each leaf. The Beauty salad is ready. You can serve it in a large salad bowl, but it's better to arrange it on a shallow plate and garnish it with walnut quarters for a festive look. Enjoy!
