Spicy Tomato and Bean Soup
A vibrant soup for anyone who loves a little heat! This recipe hails from Portugal. Thick, fragrant, and filling, it's wonderfully warming on cold fall and winter days. One bowl and you may just fall for this spicy tomato and bean soup.
Cooking method
-
Step 1:
Gather your ingredients — they're all shown in the photo for reference.
-
Step 2:
Peel the onions and cut them into medium-thick half-moons.
-
Step 3:
Sauté them in a pot in hot vegetable oil over medium heat, stirring, until light golden.
-
Step 4:
Add the tomato purée and ground chili to the onion, stir, and warm the mixture over low heat for a few minutes. You can use a fresh chili instead: wash it, remove the seeds, and mince it.
-
Step 5:
Add the red beans in their juice, stir again, and simmer for about 20 minutes uncovered. Keep the heat where it is and stir often so nothing sticks to the bottom. Next comes the final step, where you'll see how to finish the spicy tomato and bean soup.
-
Step 6:
Pour cold or pre-warmed beef broth into the pot with the vegetables, stir, and bring to a boil, stirring occasionally. The finished soup should be fairly thick. If needed, you can thicken it further with flour first stirred into a little water or cold broth. Just before turning off the heat, stir in a generous handful of chopped parsley or other herbs of your choice.
- Once the soup is ready, ladle it into bowls and serve. From the moment I came across this recipe, I'd been wanting to make it, and I was thrilled to finally get the chance. It won over not just me but my whole household, who kept asking for seconds. Let's make this soup together and share our thoughts in the comments, and swap tips with other home cooks. It comes out beautiful and appetizing, with a rich red-burgundy color. I hope it turns out well for you and you're happy with the result!
