  • Try my recipe for a delicious dish — Kesme soup. It's a soup made from lamb and lamb bones. Give it a go; it's very tasty. First, make the dough: combine the flour, egg, salt, and pepper. Mix and knead everything thoroughly until you have a firm dough. Roll it out into large sheets and cut them into noodles. Now put the lamb bones in a pot and add water. Set it on the stove and cook for at least an hour. When the broth is ready, be sure to strain it. Rinse the lamb and trim off any membrane and sinew. Then cut the meat and fat-tail fat into pieces, slice the onion into rounds, and cut the radish into thin sticks. Finely chop the green onion as well. Put the meat and fat into a separate pot and fry until the meat is golden, then add the tomato paste. Cook the mixture for another 5-8 minutes, then add the radish and green onion. After a few minutes, pour in a little broth, season with salt and pepper, and continue cooking until the meat is done. Then add all the broth, bring to a boil, and drop in the noodles. Cook the noodles for about 5 minutes and the soup is ready. Stir in the garlic, black pepper, and the remaining green onion. The Kesme soup is ready to serve.
