Garlicky Rice Fritters with Mayonnaise
These savory little fritters will win your kids over! Simple and fast — very tasty, quick to make, and cheap. The dish is punchy thanks to the garlic and mayonnaise, yet it's so tender it melts in your mouth. Just decide before you eat whether you're heading out anywhere or staying home solo. I make these for dinner once I've decided I'm not going anywhere and no one's coming over.

- Cook the rice until tender and leave it covered. Let it cool. Drain off any leftover water, beat in the egg, and stir. Add salt, baking soda, and 2 cloves of garlic (pressed). Mix everything well. Add the flour and mix thoroughly again. Pour vegetable oil into a well-heated skillet and drop the batter in by the spoonful. When the fritters are browned on one side, flip them. Transfer the finished fritters to a plate and, while they're still hot, quickly brush them with mayonnaise and sprinkle with pressed garlic.
