"Fox Tail" Layered Herring Salad

A layered salad of herring, mushrooms, and vegetables — as pretty as it is delicious! "Fox Tail" salad is festive and tasty. It's basically a "Fox Fur Coat" (a play on the classic dressed-herring salad, herring under a "fur coat" of vegetables) — you can arrange it any way you like, even shaped like a little fox.

  • Fillet the herring, removing all the bones, then chop the fillet finely. Grate the boiled potatoes and carrots. Chop the boiled eggs finely, or grate them. Set aside a little of the egg white — for the tuft on the fox's tail. Cut the mushrooms and fry them in vegetable oil. Finely chop the onion and fry it too, then mix it with the mushrooms and season with salt. Transfer the sauté to another pan and drain off the excess oil. Chop the fresh herbs and green onions. Layer the salad on a flat platter in the shape of a fox's tail: herring, green onions, mayonnaise, potatoes, mayonnaise, mushrooms with onion, eggs, mayonnaise, carrots. Place the reserved chopped egg white at the tip of the tail — that's the tuft.
