Pan-Fried Potato Pies
Wonderful potato pies, just like the ones from grandma's kitchen! There's no tastier or more beloved dish than fried potato pies. When I'm short on time, I usually buy yeast dough at the store, make a potato filling, and fry up the pies. But this recipe is a special one. Try it — you'll love it! That said, it isn't quite right for anyone keeping a strict fast, since it's made with cottage cheese, eggs, and butter.

Cooking method
- To make the dough for these pies, mix the cottage cheese with the eggs, salt, sugar, and baking soda until smooth. Add the flour and knead thoroughly until the dough is nice and elastic. Once it's well kneaded, divide it into equal-sized balls. And now, the star of the show — the filling! Boil the potatoes and mash them, then stir in more than just chopped herbs. I like to add plenty of ground pepper and a good amount of onion sautéed in sunflower oil — the more, the better! Roll the dough into rounds (as big as you like) and spoon the filling on. Personally, I love it when a pie is all filling! Shape the pies — round or long, whichever you prefer — and fry them in vegetable oil. I'm sure that once you fry up a batch this way, you'll be won over. They're irresistibly tasty and tender, and they come together in just minutes.
