Fried Haddock in Marinade

The ingredients.

For this recipe I cut the fish into fillets, removing the skin and bones.

Then I dredge the fillet pieces in flour.

And fry them in vegetable oil.

Transfer them to a container.

Now the marinade: peel the onion and cut it into thin strips.

Step 7:
Do the same with the carrots.

Step 8:
Rinse and finely chop the parsley, then sauté all of these in vegetable oil.

After that, add the tomato paste and cook for about 10 minutes.

Then pour in the fish broth (or water) and the 3% vinegar, and add black pepper, cinnamon, and cloves.

Step 11:
Leave it to simmer over low heat for about 20 minutes.

Step 12:
Right at the end, add a pinch of salt, a bay leaf, and sugar to taste. Arrange the fried fish on a nice platter and, if you like, pour the marinade over it — though you can also serve the marinade on the side in a small dish. To finish, garnish with green onion and parsley. Your fried haddock is ready — enjoy!
